Can somebody suggest a good nacho cheese dip recipe (pref not involving Velveeta)?

I'm making something for a superbowl pot luck and I do love me some velveeta, but it kinda seems like cheating. So I was hoping somebody could suggest a good nacho dip recipe. Spanx in advance.
